Luxurious Sweet Pistachio Cream (Pistachio Creme)

If you've ever had those expensive jars of Italian Pistachio Cream, you know how addictive it is. Good news: you can make it at home for a fraction of the price. This Sweet Pistachio Cream is essentially a white chocolate ganache blended with homemade pistachio paste. It's liquid velvet.

Spread it on toast, drizzle it over ice cream, use it to fill croissants or donuts, or just eat it straight from the jar (no judgment!).

Ingredients Notes

  • Pistachios: You NEED to blanch and peel them for that bright green color. If you leave the skins on, the cream will be brownish-green.
  • White Chocolate: Use high-quality white chocolate (like Lindt or Ghirardelli), not chips if possible (though chips work in a pinch).
  • Butter: Adds richness and shine.

Step-by-Step Instructions

Step 1: Blanch & Peel

Boil pistachios for 1 minute, then drain and rub them in a towel to remove the purple skins. Reveal those bright green gems!

Step 2: Grind to Paste

Process the peeled pistachios until smooth, similar to the pistachio butter recipe, but get it as fine as possible.

Step 3: Melt Chocolate

Melt white chocolate and butter together until smooth. Adding a little milk or cream here helps emulsify it.

Step 4: Blend Everything

Add the white chocolate mixture to the blender with the pistachio paste and blend until ultra-smooth. It will thicken as it cools.
