How to Scale a Recipe Correctly

Scaling recipes up or down is not as simple as doing multiplication. To maintain the exact chemistry of the bake, follow these rules:

Convert to Weights First

Always convert volume measurements (cups, spoons) to grams before scaling. Volume is inaccurate; a cup of flour can vary by 20% in weight.

Calculate Your Multiplier

Determine the yield you want divided by the yield of the original recipe. So, if you want 40 cookies and the recipe makes 12, your multiplier is 3.33.
