Easy No-Knead Bread

This recipe changed the home baking game. Time does the work for you, developing flavor and gluten without any physical effort.

The Science

A long, slow fermentation (12-18 hours) allows enzymes to align gluten strands naturally, creating structure without kneading.

Ingredients

  • 3 cups all-purpose or bread flour
  • 1 1/2 tsp salt
  • 1/2 tsp instant yeast
  • 1 1/2 cups warm water

Instructions

  1. Mix: Combine flour, salt, yeast, and water in a bowl. Dough will be shaggy.
  2. Rise: Cover and let sit at room temp for 12-18 hours.
  3. Shape: Fold dough onto itself a few times on floured surface. Shape into ball. Let rest 30 mins.
  4. Bake: Preheat dutch oven at 450°F (230°C). Place dough in hot pot. Cover and bake 30 mins. Uncover and bake 15 mins more until golden.
