Why Oven Temperature Matters
Most ovens cycle on and off to maintain temperature, meaning they swing by 20-30 degrees. Furthermore, the dial might say 350°F, but the actual internal temperature could be 325°F or 375°F.

Too hot: Burnt edges, raw center, peaked tops.
Too cold: Pale crusts, dense texture, sunken centers.
