Roasted Cinnamon Chickpeas

Crunchy chickpeas are a fantastic alternative to chips or nuts.

Chickpeas

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 tsp olive oil
  • 1 tsp cinnamon
  • 1/2 tsp ginger

Instructions

  1. Preheat oven to 400°F. Pat chickpeas very dry with a towel (crucial for crunch!).
  2. Toss with oil and spices.
  3. Spread on baking sheet. Bake for 30-40 minutes, shaking pan occasionally.
  4. Let cool in the turned-off oven for maximum crispiness.
