Simply Perfect Vanilla Cupcakes

A good vanilla cupcake is a staple in any baker's repertoire. This recipe uses cake flour for a lighter crumb and sour cream for moisture.

Ingredients

  • 1 3/4 cups cake flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat: Preheat oven to 350°F (175°C). Line muffin tin.
  2. Whisk Dry: Whisk flour, baking powder, baking soda, and salt.
  3. Cream: Beat butter and sugar until pale and fluffy. Add eggs one at a time.
  4. Add Wet: Mix in sour cream and vanilla.
  5. Combine: Alternate adding dry ingredients and milk. Do not overmix.
  6. Bake: Fill liners 2/3 full. Bake for 18-20 minutes.
