Date & Walnut Energy Bites

These little bites are lifesavers when you need something sweet but want to keep it wholesome. They come together in minutes.

Energy Bites

Ingredients

  • 1 cup walnuts
  • 1 cup medjool dates, pitted
  • 1/2 cup shredded coconut (plus extra for rolling)
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Pulse walnuts in food processor until crumbly.
  2. Add dates, coconut, cinnamon, and salt. Process until a sticky dough forms.
  3. Roll into 1-inch balls.
  4. Roll each ball in extra shredded coconut to coat.
  5. Store in the fridge.
